What Shall We Eat Today Recipes Ep 2 : Wild Pine Mushroom Noodle ~

✿ܓ  Choi Kyungsook`s Recipe 




⌇ Ingredients 

Wild Pine Mushroom
Water 1 cup
Soy Sauce 1 tsp

⌇ Steps 

Remove the dirt on the mushroom with a knife [ be careful not to damage the mushroom ]
Clean it out gently with a wet cloth
Slice the mushroom thinly [ Like thin noodle ]
Put the mushroom in a cup
Pour hot water into another cup
Season the water with soy sauce
Now pour the water on the sliced mushroom
Cover it with plastic wrap for a few minutes before eating it

What Shall We Eat Today Recipes Ep 2 : Mushroom Korean Iron Pot Rice ~

⌇ Ingredients 


♪ Rice 1 1/2 cups
♪ Variety of Mushrooms such as :
  ♪ Shiitake Mushroom
  ♪ Enoki Mushroom
  ♪ Oyster Mushroom
♪ Meat

⌇ Steps 


✿ Wash the rice and put it in an iron pot
✿ Pat shiitake mushroom cap gently for a little bit to remove the dirt
✿ Slice them [ Not to thin ]
✿ Use a lot of mushrooms [ More than the amount of rice because they will wilt once they cooked ]
✿ Grill the mushrooms without any oil to get rid of the smell
✿ Put them aside when they have turn to brown
✿ Pour some water inside the pan that has been use to grill the mushroom and cook the meat to make ✿ a broth
✿ Take the meat out and pour the broth inside the rice [The amount of broth is the same amount of rice ]
✿ Top the mushrooms on to the rice. Make it like a donut shape with a hole in the middle so that the steam can go through it
✿ Cook it on a stove with a high heat until it boils
✿ Then turn it on low heat for 10 mins
✿ Gives another 10 mins to cool off

2. Sauce
⌇ Ingredients 

♪ Boiled Meat
♪ Button mushrooms
♪ Chilli Pepper
♪ Spring Onion
♪ Garlic
♪ Seasoning
♪ Sesame oil
♪ Sesame seeds

⌇ Steps 


✿ Mince the meat
✿Chop the button mushrooms, pepper, spring onion and garlic finely
✿Season them according to taste [ Use the basic seasoning if you want ]
✿ Put a lot of sesame seeds and a bit of sesame oil

Watermelon Kerabu Recipe a.k.a Kerabu Tembikai Yummy

 Ingredients ⌇

Watermelon 1 Bowl
4 Mackerels
1 Onion [ Medium ]
Shrimp Paster / Belacan 1 cm
Red Chilli Pepper 2 pieces
Green Hot Pepper 2 pieces
Tamarind 2 tbs [ Squeeze it with some water ]

⌇ Steps ⌇

Scrap the watermelon finely in a bowl
Boil the mackerels, add a pinch of salt for taste
Debone the fish and scrap them finely
Julienne the onion
Pound the chillies with shrimp paste, tamarind juice and a pinch of salt
Mix them all together

Very Yummy Hailam Recipe ~

✿ܓ

⌇ Ingredients ⌇




♪ 3 cloves of Garlic
♪ Chicken and/or Beef [ Cut the into small pieces ]
       or
Prawn and/or Squid
♪ 4 cups of Water
♪ Thick Soy Sauce 1 tsp
♪ Oyster Sauce 3 tbs
♪ Veggies [ According to preference ]
♪ Corn Flour [ Mix with water ]
♪ Salt and pepper
♪ Noodle or Kuey Teow 1 packet
♪ Parsley, Scallion or Fried Shallot [ For garnish ]

⌇ Steps ⌇

✿ Heat a bit of oil and saute the garlic
✿ Add in the meat or seafood and stir them
✿ Pour the water and add both sauces
✿ Let it cook for 15-20 mins
✿ Now add all the veggies and cook for about 1-2 mins
✿ Add the corn flour to thicken the gravy texture
✿ Add more water if needed
✿ Season with salt and pepper
✿ Add noodle and mix them throughly just for 1-2 mins and turn off the heat
       or
✿ Soak the noodle into a hot water for few minutes, drain it and pour the gravy on it only when you want to eat it
✿ Garnish it

Easy & Delicious Grandpa's Noodle Recipe a.k.a Mee Tok Wan ~

✿ܓ  My late great grandpa always eat this before lunch time ~ haha. ~ ٩(͡๏̮͡๏)۶


⌇ Ingredients ⌇

♪ 4 Onions                    
♪ 3 cloves of Garlic            >  BLEND THEM ALL
♪ Dried chilli paste 2 tbs

♪ Oyster Sauce 2 tbs
♪ Sweet Soy Sauce 4 tbs
♪ Light Soy Sauce 1 tbs        >  MIX THEM ALL
♪ Fish Sauce 2 tbs
♪ Sesame Oil 1 tsp [ Optional ]
♪ Chilli Sauce 1tbs

♪ Water 2-4 cups [ Depends on how much you want the gravy to be ]
♪ Chicken and/or Beef  [ Small slices ]
          or
♪ Squid and/or Prawn
♪ 2-3 Eggs
♪ Corn Flour 2 tbs [ Mix with water ]
♪ Tomatoes
♪ Some veggies
♪ Noodles 1 packet

⌇ Steps ⌇

✿ Add the blend ingredients and water in a heated pan and let them boil a little
✿ Add all the sauces and stir well
✿ Add meat or seafood and seasoned them with salt
✿ Add eggs and let it cook a while
✿ Add veggies
✿ To make the gravy thicker, add the corn flour
✿ Now add in the noodles and let them boil
✿ Add more salt if needed

Homemade Pancake Recipe ~

⌇ Ingredients ⌇

♪ 3 Eggs
♪ Milk 600 ml
♪ Self Raising Flour 450 g
♪ Caster Sugar 170 g
♪ Baking Powder 3 ts

⌇ Steps ⌇

✿ Whisk eggs and milk together in a bowl
✿ Add all the other dry ingredients and whisk until it mix throughly
✿ Cover the bowl and leave the batter for 1 hour
                           ...
✿ Beat the batter well with a spoon and if it is too thick, add a splash of milk
✿ Grease the pan with butter on medium heat
✿ Put a dollop of batter on the pan
✿ Let them cook until the bubbles start to appear
✿ Flip them and wait for about 2-3 mins to let them cook evenly on both sides

Blueberry & Strawberry Cheese Tart Recipe ~

✿ܓ  Strawberry Tart I Made ~


1. Shell

⌇ Ingredients ⌇

♪ Butter 250 g
♪ Icing Sugar 125 g [ Sifted ]
♪ Vanilla Essence 1 tbs
♪ 1 Egg [ Grade A ]
♪ All purpose flour 500-550 g [ sifted ]

⌇ Steps ⌇

✿ Mix butter and icing sugar
✿ Add vanilla essence 
✿ Add whole egg and mix until fluffy
✿ Add flour and mix until the batter becomes dough
✿ Take some of the dough and put it into the tart mould
✿ Press te dough until it has even thickness
✿ Trim the surface with a knife evenly
✿ Prick the tart shell surface with a fork 
✿ Bake in preheated oven at 160 c with a top and bottom heat until slightly brown for 20 mins 

2. Filling

⌇ Ingredients ⌇

♪ Cream Cheese 250 g [ Room temperature ]
♪ Butter 20 g
♪ Caster Sugar 60 g
♪ 1 Egg [ Grade A ]
♪ Blueberry or Strawberry Filling
Piping bag [ 2-3 pieces, for cream cheese mixture and filling ]

⌇ Steps ⌇

✿ Mix the cream chesse, butter and sugar
✿ Add an egg and mix until fluffy
✿ Pipe the filling into the tart shells
✿ Pipe the cream chesse mixture on top of it
✿ Decorate the cream chesse surface with the filling [ I use another piping bag for this because I want the hole to be cut much smaller than the other one. I find it much easier to decorate the tarts this way. ]
✿ Bake in preheated oven at 160 c with bottom heat for 5-10 mins
✿ Keep them in air tight container and put in the fridge to keep it fresh longer.
